How Spicy Is It, Really

What the red actually means, which dishes aren't spicy at all, and the words that get you a milder one.

The short answer

Korean heat is broad and warm rather than sharp — it builds and sits, and it's usually mixed with sweetness and fermented depth rather than standing alone. If you can eat a hot curry you'll be fine almost everywhere. And a large part of the food isn't spicy at all, which surprises people who arrive braced for it.

Dishes with no heat in them

  • 갈비 / 불고기 — grilled or braised beef in a sweet soy marinade. Not spicy.
  • 삼겹살 — grilled pork belly, seasoned by you at the table. Not spicy.
  • 김밥 — the rice roll. Not spicy.
  • 만두 — dumplings, steamed or fried.
  • 설렁탕 / 곰탕 — pale beef broths, seasoned with salt at the table.
  • 잡채 — sweet potato noodles with vegetables, sweet and savoury.
  • 돈까스 — breaded pork cutlet.

Kimchi still arrives with all of them as a side dish, but it sits on its own plate — nothing on this list has heat cooked into it.

Where the heat actually lives

Asking for less

This works better in some places than others: a stew simmered in advance can't be un-spiced, while anything assembled to order usually can.

  • 안 맵게 해주세요 (*an maep-ge hae-ju-se-yo*) — "not spicy, please."
  • 덜 맵게 (*deol maep-ge*) — "less spicy." More often possible than "not at all."
  • 이거 매워요? (*i-geo mae-wo-yo?*) — "is this spicy?" The most useful of the three.
  • Chains and tteokbokki shops often have numbered heat levels on the menu, which removes the negotiation entirely.

If it's too hot anyway

Water spreads it around. What actually helps is on the table already: rice, the plain side dishes, and anything dairy if you can get it. A spoonful of rice does more than a glass of water.

Ask before assuming a dish is safe. "Not spicy" and "mild" mean different things to the person answering, and the honest question is whether you would call it spicy — which is why the phrase above is worth more than the label on the menu.
